Aguacates Rellenos de Camarones

Avocado stuffed Shrimp.
A fellow knottie passed along this recipe to me the other day and I could not wait to try it. Convincing my husband was another story. He loves avocado, and he loves shrimp, but he was not quite sure how the two were going to go together. If you have read my other blogs then you know cooking for him is not the easiest thing in the world, he has to see every recipe and determine how bad it is for him, he's crazy but we love each other - and all of our crazy quirks. So I got the go ahead to try this recipe:


Aguacates Rellenos de Camarones
3 ripe avocados
24 shrimp, peeled and deveined
¼ cup finely chopped onion
Juice of 2 limes
3/4 cup salsa rosada**
3 tablespoons fresh cilantro
Salt and pepper
Directions
1. Bring water to a boil in a small pot. Add the shrimp, cover and turn the heat off. Leave the shrimp in the water for 5 minutes and drain.
2. In a medium bowl, place the shrimp, onion, salsa rosada** cilantro, parsley, salt and pepper. Mix well.
3. Cut the avocados lengthwise and remove the pit, drizzle with the lime juice and sprinkle with salt and pepper.
4. Place the lettuce in a serving plate and place the avocados on top. Fill each avocado with the shrimp mixture.
5. Sprinkle with fresh cilantro and serve immediately.


**Salsa Rosada 

½ cup mayonnaise
¼ cup ketchup
¼ teaspoon lime juice
Salt
Fresh ground pepper
¼ teaspoon Tabasco (Optional)

Directions:
In a small bowl combine all the ingredients and mix well. Season with salt and pepper.

I modified the measurements of everything since I was only making this for me and Brad, the serving above serves six.

This meal was super easy and quick to make, and Brad really enjoyed it, as did I. I will definitely be making this again for the both of us, and score one for discovering another meal Brad likes!

Scrappin' Bee

Yes I made another one. I made this book for my dear friend Kristie who is getting married in October. I am so excited for her wedding, after all I was there the night she met her soon to be hubby = ) I opted not to get her a blender, or a place setting, instead something a little more personal that she can have (well hopefully) forever. From river trips, to the Houston Rodeo, to our Ski Trips and more, the book definitely told some great stories and brought back some fun memories from the past 5 years...and of course who could forget the good ole Wildfire days back in High School. I cherish my friendship with her, and can't wait to stand next to her on her wedding day just as she did on mine - and then shake it on the dance floor!

Crescent Lasagna

If you are craving lasagna but do not want to put the work into it, a friend of mine gave me this recipe. It took about 10-15 minutes to prep and 20 minutes to bake. I highly recommend it, and my husband really enjoyed it as well!

Ingredients:
1 lb of ground beef
1/2 medium onion chopped
1 tsp. garlic salt
1/2 teaspoon oregano
1/4 teaspoon of salt
1 6oz can of tomato paste
1 cup cottage cheese
1 egg
1/4 cup of parmesan cheese
2 packages of crescent rolls
2-4 slices of mozzarella cheese

Directions:
Preheat oven to 375
Brown Beef
Once browned add in salt,garlic salt, oregano, tomato paste, onion, and 1 1/2-2 slices of mozzarella stir and simmer for 5-10 minutes
Meanwhile, in a bowl mix cottage cheese, egg, and parmesan
On a cookie sheet spread out one package of crescent rolls to form a rectangle
Put meat down the middle of the roll
Spread cottage cheese mix on top
Place 2 slices or so of mazzarella cheese
Place other crescent roll on top and pinch the sides so it looks like a ginormous hot pocket or calzone
Bake in oven for 20-25 minutes or until browned
Serves 4-6
If eating as a leftover DO NOT reheat in a microwave, it gets soggy. Reheat in a toaster oven or regular oven

If you are making for 2, you can half the recipe.

Neglected

This is what my blog has been...neglected. I apologize to you blog for not updating you. Things have been busy, but going well. Quick update:

- Friends bachelorette party on the river
- Soccer
- Sliced my foot because my glass bowl exploded while making home made ice cream - which can only happen to me.
- Williams-Sonoma replaced my bowls, probably because they did not want me to sue them
- P.S. I Love You is a good movie
- The Goods was NOT as good
- Vanilla ice cream with hot fudge is amazing
- My cat is still a badass
- My husband surprised me and cleaned the whole kitchen, and organized the pantry so we will put him in the "badass" category
- Grotto's Sangria is what I dream about at night, ok and during the day
- Our ski trip is booked - Steamboat Springs we are coming back!
- Made a pretty new scrapbook for a friend
- Doing Pilates every Tuesday

That is about it, I will make a more notable blog soon maybe even with pictures, I promise, but this will do for now. = )
